Here is something from the family recipe collection. Spring is the best season for fresh potatoes and onion. It is getting hot in Fukuoka and summer vegetables such as cucumbers and tomatoes are available for reasonable price now!
Ingredients (serves 4):
- 2 middle size potatoes
- 1/2 small onion
- 1/2 cucumber
- 1 egg
- 20-30g of ham, bacon or canned tuna*optional*
*Crispy fried bacon is used for today’s recipe
1. Cut and peelpotatoes into four and soak in water for 10 mins.
2.Boil the potatoes until soft.
3. Boil eggs for 6mins. Chop into 1cm cubic size and cool down.
5. Add salt, pepper and fried bacon as topping.
